how to make Jamaican hot sauce
Hot sauce
2 1/2 dozen Red hot peppers
4 Oz chopped carrots
3oz chopped onion
3 quarts vinegar
Pinch of salt to taste
2 tablespoon sugar
1lb chopped tomatoes (optional if not red pepper )
Preparation
1. Chop peppers into small pieces with seeds
2. Add to vinegar, with onions and carrots
3. Add tomatoes if wished
4. Add sugar and salt to taste
5. Put to boil for 7 minutes, leave in pot overnight
6. Remove from pot, put it in a jar with close lid
7. Process in two days
8. Strain to remove pieces
9. Served with teaspoon, sprinkle desired amount over food.
